Ingredients
  

  • 1 lb thinly sliced beef such as ribeye or sirloin
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 8 oz provolone cheese, shredded
  • 4 cups cooked white rice
  • Salt and black pepper to taste

Method
 

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the sliced onions and bell peppers to the skillet. Sauté for 5-7 minutes, or until the vegetables are tender and lightly caramelized.
  3. Push the vegetables to the side of the skillet and add the sliced beef. Cook the beef, stirring occasionally, until it's browned and cooked through, about 5-7 minutes.
  4. Combine the beef and vegetables in the skillet, and season with salt and black pepper to taste.
  5. Divide the cooked rice evenly among 4 bowls. Top each bowl with the Philly Cheesesteak mixture, and sprinkle the shredded provolone cheese over the top.
