  • 1 lb Italian sausage, casings removed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 2 cups baby spinach, chopped
  • Grated Parmesan cheese for serving optional

Method
 

  1. In a large pot or Dutch oven, cook the sausage over medium heat, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes.
  2. Add the diced onion and minced garlic to the pot and cook for 2-3 minutes, until fragrant.
  3. Pour in the broth, diced tomatoes, oregano, and basil. Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 10 minutes.
  5. Add the gnocchi to the pot and cook for an additional 5-7 minutes, until the gnocchi are tender.
  6. Stir in the chopped spinach and cook for 1-2 minutes, until the spinach is wilted.
  7. Serve the Italian Sausage and Gnocchi Soup hot, with a sprinkle of Parmesan cheese on top, if desired.

Notes
